Nutty Chickpea Snack
Yields 4-6 Servings
Gluten Free/Dairy Free
Ingredients:
* 1 teaspoon curry powder * 1/4 teaspoon cinnamon
* 3/4 teaspoon chili powder * 1/2 teaspoon salt
* 1/2 teaspoon cumin * 1 15-ounce can chickpeas, well drained,
*1/2 teaspoon garlic powder rinsed, and patted dry
*1/4 teaspoon cayenne pepper * 1 tablespoon coconut oil, warmed to liquid
*1/4 teaspoon ground ginger
Instructions:
Preheat oven to 450 degrees
In a medium bowl, combine all the spices and toss with a fork to mix. Add the chickpeas, drizzle the oil over all and toss gently to evenly coat the beans. Spread chickpeas out on a shallow roasting pan or edged baking sheet. Roast for 35-40 min, turning twice, until just browned and slightly shrunken-watch carefully at the end of cook time to prevent scorching.
Cool then in the pan for 15 minutes and then store in the fridge.
Note: I used olive oil rather than the coconut oil the first time I made these and they turned out great!
